If you are avoiding dairy for health reasons, you may think you’ve given up that creamy taste forever. Not only is this recipe dairy free, but it is Paleo diet friendly. Green Goddess is a great salad dressing, and you’ll also be getting some good nutrition.
This dressing is based on one of the most nutrient dense foods available. Not only does avocado provide an excellent source of essential fatty acids, it is also a great source of a number of carotenoids, including beta carotene, alpha carotene and lutein. Note that avocado fat is not unhealthy fat: you are getting phytosterols (which help control cholesterol); you can reduce inflammation in the body with polyhydroxylated fatty alcohols; and, you’ll get a good dose of oleic acid which aids the digestive tract and reduces the risks of heart disease.
Then there is the flavour, coming from herbs like basil and items like garlic. You’ll get ample amounts of basil, which is in the research lately for many health benefits. You’ll also get some raw garlic – a food item that can even reduce your risk for cancer.
The best thing of all is that this dressing is fairly simple to make – and is a tasty addition to your favourite meal.
1/4 cup coconut milk
3 Tbsp lemon juice
1-2 garlic cloves, minced
2 anchovy fillets, minced
1/4 cup chopped fresh basil
2 Tbsp chopped fresh parsley
1 Tbsp chopped fresh tarragon
1/2 cup extra virgin olive oil
Take all the ingredients, except the olive oil, and put these in a food processor. Combine well. With the blade still running, slowly pour in the olive oil until the dressing has thickened nicely and the herbs are finely chopped. This dressing will keep for up to a week in the fridge, but is best used within 5 days.
